This basic sponge recipe is the same recipe given to me by my mother when I was a young girl. Its suitable for beginners and children. So if you have never baked a cake before this is the ideal recipe for you. Its mouth watering delicate vanilla flavor with it's melt in the mouth airy sponginess makes it an absolute british classic.

Cheap is best :)

When it comes to ingredients I find that the unhealthy cheap stuff is the best! There is no need to buy organic flour or top grade butter. Cakes are treats and you wont be having one every day. White refined caster sugar, refined self raising flour, margarine - all the things you try to avoid in everyday life, embrace them all on cake day!

A word of warning!

Finally a few words of advice for beginner bakers- make sure your butter is not salted or made with olive oil (or other flavored fats) and make sure your flour is self raising. Try not to open the oven door while cooking except to check if its ready near the end of the cooking time. Otherwise your cake might drop in the middle!
