Rainbow Cake Recipe

The fantastically fun rainbow cake is a simple spin on the traditional sponge cake. The basic recipe is exactly the same as the sponge cake but before you put the mixture in the baking tin, divide the cake mix into four seperate bowls. Add a few drop of your favourite food colouring to each bowl. Stir it into the mixture and then loosely spoon into the baking tin!

Once cooked not only will your cake be delicious, spongy and moist to eat, it will also be the colourful and fun to look at!

Ingredients

  • 220g/8oz unsalted butter or margarine
  • 220g/8oz caster sugar
  • 4 medium eggs
  • 220g/8oz self raising flour
  • Milk
  • 4 x different coloured food colouring

You will need

  • 1x 18cm/7in deep cake tin
  • Grease proof paper
  • A wooden spoon
  • A large metal spoon
  • A mixing bowl
  • 4 breakfast bowls
  • Measuring scales
  • A wire rack
  • Metal skewer
  • Sift

Make the chocolate cake

  • Pre heat the oven to 180C/350F/ Gas 4/5.
  • Line the sandwich cake tins with grease proof paper .
  • Cream together the butter and the sugar until pale, using the wooden spoon.
  • Beat in the eggs.
  • Add the vanilla essence.
  • Sift in the flour and then fold it in using a large metal spoon.
  • The mixture should be of a dropping consistency - if it isn't, add a little milk.
  • Seperate the mixture into 4 different bowls. Add a few drops of different coloured food colouring to each bowl and stir it into the mixture.

  • Add a spoon of mixture from each bowl to the baking tin until all the mixture has been added.
  • Bake for 20-25 minutes. There a number of ways that you can tell if a cake has finished cooking.
    1. If you insert a skewer into a ready cake it will come out clean.
    2. Gently press the top of the cake. If the cake is firm and springs back to position then it is ready.
    3. Listen to the cake, if you can hear a lot of bubbling and crackling it is still cooking, if it is quiet its ready!
  • Remove from the over and allow to stand for 5 minutes before turning on to a wire rack, removing the greaseproof paper and let it cool.
  • Sandwich the cakes together with jam.
